Happy V-Day! The boyfriend and I don't do much for Valentine's Day but I love to do a little cooking!
I was craving strawberry shortcake today and thought it would be the perfect dessert. I made it with a cream scone recipe that made more of a sweet, creamy biscuit than a denser scone.
Here's the cream scone recipe:
2 cups all purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
2 Tablespoon sugar
1/4 cup butter
1/2 cup cream
2 eggs
Mix all the dry ingredients. Cut in the butter until crumbly. Do not over mix. Whisk the cream and eggs together and add to the dry ingredients. Mix just until the dough comes together. Divide the dough into 4 equal portions or 8 smaller portions (the biscuits will expand while cooking) and scoop onto a cookie sheet. Preheat the oven to 375 degrees F and bake the biscuits for 20 minutes.
It's a quick and fairly light biscuit that is delicious and perfectly paired with strawberries and whipped cream!
